Chipotle Chicken Sandwich

Made with San Francisco Style Sourdough

Ingredients

  • 4 slices Stonemill® San Francisco Style Sourdough, toasted
  • 1 rotisserie chicken breast, sliced
  • 2 tbsp (30 mL) Greek yogurt
  • 2 tbsp (30 mL) light mayonnaise
  • 2 tbsp (30 mL) finely chopped fresh cilantro 2 tbsp (30 mL) chipotle sauce
  • 1 tbsp (15 mL) lime juice
  • 1/4 tsp (1 mL) each salt and pepper 1/2 cup (125 mL) baby spinach
  • 1/2 avocado, pitted, peeled and sliced
  • 4 tomato slices
  • 2 slices red onion rounds

Directions

  1. Combine yogurt, mayonnaise, cilantro, chipotle sauce, lime juice, salt and pepper.
  2. Divide and spread the yogurt mixture on 2 slices Stonemill® San Francisco Style Sourdough.
  3. Top with rotisserie chicken slices, more yogurt mixture, spinach, avocado, tomato and onion.
  4. Cap with the remaining bread slice.

Tip: Alternatively, substitute chipotle sauce with 1/2 tsp (2 mL) chipotle chili powder.
