Coronation Chicken Sandwich

A nod to traditional coronation chicken, this fresh take layers sliced chicken with a creamy curry yogurt spread on Stonemill® Hearty Grains and Seeds Wide Slice Loaf, bringing hearty texture and comforting flavour to lunchtime.

Ingrédients

  • 2 slices Stonemill® Hearty Grains and Seeds Wide Slice Loaf
  • 2 tbsp (30 mL) Greek yogurt
  • 2 tbsp (20 mL) low-fat mayonnaise 1 rib celery, finely chopped
  • 1/4 cup raisins (optional)
  • 1 tsp (5 mL) curry powder
  • 1 tsp (5 mL) honey
  • 1 tsp (5 mL) Dijon mustard Pinch each salt and pepper
  • 1 cooked boneless, skinless chicken breast, sliced 1 head of gem lettuce, halved
  • 4 slices of tomato
  • 2 slices of red onion rounds
  • 2 tbsp (30 mL) fresh cilantro leaves

Directions

  1. Combine yogurt, mayonnaise, celery, raisins, curry powder, honey, Dijon, salt and pepper.
  2. Divide the curry mixture evenly and spread it onto the 2 slices of bread.
  3. Top with chicken, lettuce, tomato, onion, and cilantro.
  4. Cap with the remaining bread slice.
  5. Cut in half to serve.

Tip: If desired, shred or dice chicken and toss with the yogurt mixture for a more traditional coronation salad and assemble on the sandwich.
Substitute with other greens if desired
