Waldorf Chicken Salad Sandwich

What You'll Need:

  • ½ cup Greek Yogurt
  • ½ cup Mayonnaise
  • 2 tsp Honey
  • ½ tbsp freshly squeezed Lemon Juice
  • 2 Scallions, thinly sliced
  • 1 Celery stalk, fine diced
  • 1 small Apple, unpeeled and small diced
  • ½ cup Red Grapes, sliced
  • ½ cup Black Grapes, sliced
  • ½ cup toasted chopped Walnuts
  • ½ tsp Celery Seed1 tbsp chopped Parsley
  • 2 cups, shredded cooked Chicken
  • Kosher Salt & fresh ground Black Pepper to taste
  • 4 tbsp butter, softened
  • 8 slices Stonemill Bakehouse Cranberry Pumpkin Seed bread
  • 1 head Green Leaf, Butter or Bib Lettuce, washed.

What You'll Need To Do:

  • Combine the yogurt, mayonnaise, lemon juice, and honey in a large bowl.
  • Add scallions, celery, apples, grapes, walnuts, celery seed, and parsley and stir together.
  • Add shredded chicken to mixture and combine well. Season with salt and pepper to taste.
  • On a cutting board or tray, layout and butter 8 slices of Stonemill Bakehouse Cranberry Pumpkin Seed bread.
  • Place a piece of lettuce big enough to cover the entire bread slice.
  • Divide the Waldorf chicken salad onto each piece of lettuce and top with the remaining bread slice.
  • Cut in half if desired and serve!
